Authentic Pad Thai
Street-food style pad thai — wok hei, chewy rice noodles, prawns, egg, tamarind and fish sauce.

Ingrédients
- 200 unit dried flat rice noodles — soaked in cold water 30 min
- 200 unit raw king prawns — peeled
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 3 unit eggs
- 100 unit bean sprouts
- 4 unit spring onions — chopped
- 50 unit roasted peanuts — crushed

Mix tamarind, fish sauce and palm sugar. Taste — it should be sour, salty and slightly sweet.

Heat wok until smoking. Add oil and prawns, stir-fry 2 minutes, push to side.

Add drained noodles and sauce. Toss well.

Push noodles to side, crack eggs into wok, scramble briefly then fold into noodles.

Add bean sprouts and spring onions, toss 30 seconds.

Serve with crushed peanuts, lime wedge and dried chilli on the side.
