Classic French Onion Soup
The definitive onion soup — deeply caramelised onions in rich beef broth with a Gruyère-topped crouton.

- 6 large yellow onions — thinly sliced
- 4 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp caster sugar
- 1 cup dry white wine
- 6 cups beef broth
- 1 tsp fresh thyme leaves
- 8 slices sourdough baguette
- 150 unit Gruyère — grated

Melt butter with oil in a large heavy pot over medium heat. Add onions and sugar.

Cook onions stirring every 10 minutes for 50–60 minutes until deeply golden and jammy.

Add wine, scraping up all caramelised bits. Boil until reduced by half.

Add broth and thyme. Simmer for 20 minutes. Season well.

Ladle into oven-safe bowls. Top with toasted baguette slices and a generous layer of Gruyère.

Broil/grill until cheese is bubbling and golden in spots. Serve immediately.
