The four levers that matter

1. Turn-time honesty

Stop telling guests "your table is yours for the evening" if you actually need it back in 90 minutes. Either commit to one seating or warn them at booking — the worst outcome is rushing a happy guest at dessert.

2. Deposit, not penalty

A €10 deposit per cover redeemable against the bill drops no-shows by 50–70% with zero damage to perception. Penalty-only policies feel adversarial and conversion tanks.

3. Seat the right party

A weekly cadence that works

  • Monday: review last week's no-shows, late-cancels, and turn times
